Cheddar Biscuits

I had been craving cheddar biscuits from Red Lobster for a while. Damn you advertisements (commercials)!! You work too well on me! I found this recipe online and had to try it. I was surprised by how easy they were to make and most of all, how cheap they are! I had all the ingredients at home just had to buy some cheddar cheese. Which if you know me, you know that I don't keep cheese at home... I am so glad I made these! They are delicious and comparable to Red Lobster's. I am sure theirs are only a little tastier because they have more butter.

HOORAY! I now have cheddar biscuits that I can enjoy at home any day! Honestly, I only go to Red Lobster once a year because of the biscuits, and an ocassional drink :) I don't care for the food much. Plus, I don't feel like paying $20 for dinner and a drink when I only want 3 biscuits.

Enough talk. Let's get down to business...

Ingredients

For the biscuits:

  • Cooking spray
  • 1 3/4 cups all-purpose flour
  • 1 tablespoon plus 2 teaspoons baking powder
  • 2 1/2 teaspoons sugar
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable shortening, at room temperature
  • 4 tablespoons cold unsalted butter, cut into 1/2-inch pieces
  • 6 ounces grated yellow cheddar cheese (about 1 1/4 cups)
  • 3/4 cup whole milk

For the garlic butter:

Directions

Position a rack in the upper third of the oven and preheat to 425 degrees. Lightly mist a large baking sheet with cooking spray.

Make the biscuits: Pulse the flour, baking powder, sugar and salt in a food processor. Add the shortening and pulse until combined. Add the butter; pulse 4 or 5 times, or until the butter is in pea-size pieces. Add the cheese and pulse 2 or 3 times. Pour in the milk and pulse just until the mixture is moistened and forms a shaggy dough. Turn out onto a clean surface and gently knead until the dough comes together. Do not overwork the dough or the biscuits will be tough.

Drop the dough onto the baking sheet in scant 1/4-cup portions, 2 inches apart, and bake until golden, 15 to 20 minutes.

Meanwhile, make the garlic butter: Melt the butter with the garlic in a small saucepan over medium heat; cook for 1 minute. Remove from the heat and stir in the parsley. Brush the biscuits with the garlic butter and serve warm.

Don't be afraid to get your hands dirty! Since I don't own a food processor, I went ahead and used a whisk for the dry ingredients and then mixed everything with my hands when it was time to add the butter and milk. The dough gets sticky but it was fun :)  The only change I would make is to use a little less cheese, but that's just me because of my not-big-fondness of cheese.

    Cook in a pot:
    water
    chicken breast
    onion
    garlic

    Shred chicken after cooking.
    In another pot:
    sauteƩ sliced white onions
    with oil

    In the blender:
    put in a can of chipotle peppers (whole)
    tomato sauce


    NEXT:
    Put sauce into onions and let it simmer.
    Then after simmering, add the shredded
    chicken.


    Mix well.


    Let it heat up for about 10 - 15 minutes.

    Then place on tostadas or tacos with all the toppings:
    Shredded Lettuce
    tomato
    onions
    sour cream
    or any other tostada/taco
    toppings
